Organic dairy farms have been impacted by several trends: -Buy local movement -Organic fresh trend -Concern over environment -Concern over additives/chemicals (food safety) -Anti-big business/corporation trend -Taste Basically more people want to connect with the producer of their food, know the story about the product and the producer, and be assured that it is fresh, without additives. Asian Americans, African Americans, and Latino Hispanics power these trends. More than half have incomes less than $50,000/year. They have children and are concerned about what their children eat.
