Unformatted text preview: Every time there is a food borne outbreak some where there is a major break down in the protection of the foods. Look at the recent melamine incident in China or the salmonella problem that is now going on with frozen dinners. It is all around us – the text points out that there are some I am sure that as you read through this chapter you wondered if there is really any safe food out there that you can eat. There are so many opportunities for the food to become contaminated or adulted that it is any wonder that we are not all dead from unsafe foods. Many times if one follows basic rules you will be safe. It is just like driving down the road. If you pay attention to the basic rules of the road you will be fine and get to your destination in good shape. It is when you do not that unfortunate things happen. What would be some of those basic rules. Let back up and look at the history of food inspection and an attempt to provide safe food to the consumer To understand the food code in some ways you need to understand how regulations are really developed. Now this is an oversimplification but it does really apply. A group of regulators get together to develop a rule. Each brings to the table their own particular story of a horrendous situation that they never want to see happen to any one else. As the rules are drafted this story comes out and then is institutionalized into the rule. Some times the rule is a representation of aesthetics and really has nothing to do with safe food. Like the PMO requirement that the dairy farm be neat and clean. When computers came alone it was realized that we could produce reports on the inspections. The problem was that the wide sheets only allowed for 44 columns. The result was that the 118 item inspection sheet was collapsed into 44 items. Nothing was removed. The text talks about this program but it is important that you understand the concept because it is pivotal and foundational to the production of safe food. This concept applies from the farm to the table and not just in the food store. Lets have a quick look at the origin of the program and who uses the concept....
