Nutri Sci- Ch.1 notes 23:42 INTRODUCTION Nutrition information is widespread in the popular media; this book uses scientific  background to clarify the correct nutrition Every organism has a role in the flow of nutrients Nutrients - substances that the body uses for various purposes Essential - necessary for life, and cannot be synthesized by the body The body makes vital substances such as compounds in various body tissues and  hormones, we do not need to eat these because our body synthesizes them A variety of substances function as  NUTRIENTS  for humans: o Water We need water more frequently than any other nutrient Water gives form to our cells, cools us, flushes wastes from our bodies,  dissolves vital substances that we use, and provides a solvent in which  chemical reactions can occur  Macronutrients:  needed in large quantities
