10/10/11 Chapter 8 - Nutrition Concept o Nutrient : a chemical in food crucial to the body’s growth and functioning; includes proteins, carbohydrates, fats, vitamins, minerals, and water o Essential Nutrient : what we need to obtain from food for normal functioning Calorie, calories, and Kilocalories c alories: energy released by the body C alories: used by dieticians; = 1000 c alories Kilocalories: “ o Essential Nutrients are classified into: Macronutrients vs. Micronutrients; Fuel vs. Regulatory Macronutrients : needed in large quantities Micronutrients : needed in small quantities Fuel : needed to supply in energy Regulatory : regulates body processes o Carbohydrates Class of nutrients containing sugars and starches and supplying most of the energy for daily living Carbohydrates may be simple or complex: Simple : made up of 1 or 2 sugar subunits o Mono- or di- saccharide o Complex : made up of polysaccharides o Critical for delivering time released energy o Polysaccharides are broken down more slowly than simple sugars Very important for storing energy o Glycogen : storage form of energy o Cellulose : structural carbohydrate in plant sources;
