Chapter 6 – Water 17/03/2008 17:23:00 Definitions Molecule—a group of atoms held together by chemical bonds Chemical bonds—energy relationships between atoms that hold them together, formed when electrons are shared between atoms or moved from one atom to another Polar molecules—a molecule with a positively and negatively charged magnetic end Hydrogen bonds—when a hydrogen atom in one molecule is attracted to another atom in a different molecule o In the case of water, it is hydrogen bonding with oxygen Cohesion—the property of water molecules that causes water molecules to stick to each other Adhesion—the property of water molecules that causes the tendency for water to stick to other materials, making them wet Heat—energy produced by the random vibration of atoms or molecules o A measure of how many molecules are vibrating and how rapidly they are doing so Temperature—a record of how rapidly the molecules of a substance are vibrating Heat capacity—a measure of the heat required to raise the temperature of 1 gram of a substance by 1 o C or 1.8 o F Calorie—the amount of heat required to raise the temperature of 1 gram of pure water by 1 o C (1000 calories = 1 nutritional calorie) Density—mass per unit volume Density curve—a graph showing the relationship between the temperature or salinity of a substance and its density State—an expression of the internal form of a substance Freezing point—the transition from liquid to solid state, at which point the bond angle in a water molecule expands from about 105
