The introduction part of In Defense of Food shows us the structure of this book. Itwas composed by three sections: The Age of Nutritionism, The Western Diet and topropose a couple dozen personal rules of eating that are conducive not only to betterhealth but also to greater pleasure in eating. The introduction does not deeplydemonstrate the author’s idea, even more brief than his article Unhappy Meals.According to his introduction, his first part of book would focus on how thehousewives lose the power to decide their menus, how the nutrition replace the food,how the experts and diet industrial companies form one benefit community to misleadmasses people, how people’s views of eating changed from enjoying food to addingnutrition and how the Nutritionism destroy our health.
