The introduction part of In Defense of Food shows us the structure of this book. It was composed by three sections: The Age of Nutritionism, The Western Diet and to propose a couple dozen personal rules of eating that are conducive not only to better health but also to greater pleasure in eating. The introduction does not deeply demonstrate the author’s idea, even more brief than his article Unhappy Meals. According to his introduction, his first part of book would focus on how the housewives lose the power to decide their menus, how the nutrition replace the food, how the experts and diet industrial companies form one benefit community to mislead masses people, how people’s views of eating changed from enjoying food to adding nutrition and how the Nutritionism destroy our health. All these topic will focus one opinion: whether or not to defense the food. Second part of may begin at or followed with the French paradox. The author
