CHICKEN AFRITADA (CHICKEN BRAISED IN TOMATOSAUCE)Ingredients: ½ kilo chicken (mix ofthighs, wings and drumsticks)2 tablespoons butter2 cloves garlic, chopped1 medium onion, chopped2 tablespoons fish sauceSalt and pepper, to taste5 tbsp tomato sauce1 tbsp tomato paste1 cup chicken broth2 medium potatoes, cubed1 carrot, cubed1 red bell pepper, cubedCheese for garnishProcedure:1.Marinate chicken pieces in soy sauce and fish sauce for half an hour. Drain chicken from the marinade.2.In a heavy pan, heat oil over medium high heat. Sauté garlic, onions, carrots and tomatoes for 2 minutes or until onions are soft. Remove it from the pan and set aside.3.Add chicken pieces and saute for a few minutes until meat is nicely browned and no longer pink.4.Add tomato sauce and chicken broth and stir to combine. Also add tomato paste for extra color to the dish. Let the mixture boil and then reduce heat. Add the knorr cubes for bettertaste. Cover and let simmer, stirring occasionally for 20 minutes.5.Add carrots, red bell pepper and potatoes; cover and cook for 10 minutes or until potatoes
