Unformatted text preview: hain length* Saturated, Monounsaturated, Polyunsaturated Bonds can be cis or trans isomers Double bonds provide a location for auto‐oxidation and free radical formation (hint – take a look at some of the vitamins and minerals that we feed to prevent this oxidation; they help protect the lipids in your body and stabilize feed lipid) Fatty acids are named according to carbon length and location of double bonds o Carbon are numbered by the C number system (counts from carboxyl to methyl end) or the omega system (from methyl to carboxyl end) to indicate location of double bonds Essential fatty acids can not be synthesized in the body and must be included in the diet o Linoleic, Linolenic, and Arachadonic (most animals can make arachadonic from linoleic; cats lack the enzyme to this = essential for them Example Question: Which fatty acid would have the highest melting point? a) 18:2 Δ 3,6 b) 20:4 Δ 6,9, 12, 15 c) 18:0 d) 24:4 Δ 3, 6, 9, 12 Lipid Digestion Ruminant and non‐ruminants digestion and absorb lipid in a similar manner using the small intestine o Must consider the modifications made to fatty acids by rumen microbes before they enter the small intestine – this is the primary difference between ruminant and non‐ruminant systems There are two major challenges with lipid digestion: o Triglycerides are too large to be absorbed whole o Lipid is not water soluble Digestion of lipid may begin with enzymes in the...
