Unformatted text preview: vely by phytates, dietary fibre and tannins, and is enhanced by vitamin C Absorption of Fe • Maintenance of Fe balance occurs mainly in GI tract through absorption regulation • Generally only 5- 10% of dietary Fe is absorbed, but can vary from 1- 50% depending on Fe reserves • Most Fe (heme iron) is absorbed intact; heme is degraded in the enterocyte and Fe released • Nonheme Fe, as a rule, crosses membranes as Fe2+ and is transferred as Fe3+ • Fe destined for absorption will be in Fe2+ form Plasma Fe Transport • Iron is transported in blood by transferrin • Transferrin is synthesized mainly in the liver where it is regulated by the presence of Fe • Small amount of total body Fe is bound to transferrin but it is the most active pool with the fastest turnover • Fe bound to transferrin is not available to catalyze free radical reactions • Fe3+ is transported to the bone marrow for use or storage in the liver or muscle or spleen Fe Storage • Excess Fe is stored in the liver, muscle or spleen Ferritin • Most common form of storage • Sole function is to store Fe, binds excess cy...
