Some of the challenges the Castelli family faced were some financial problems in the mid-2000s, which resulted in losing the restaurant building to the bank when the economy began to struggle. The great-grandchildren had to also move back to Illinois and gain control of the restaurant and buy it back from the bank. 2. Yes, the current concept does have longevity, that’s why they didn’t change much to change the restaurant because of the long- term customers. They only thing it seems they altered was how much time the owners spend at the restaurant and making positive relationships with their customers to ensure they enjoy their time. 3. Some things the owners can do to boost their revenue would be to lower their food and beverage cost as well as the labor cost. a. Ways that they can lower their food and beverage cost would be taking some items off their menu and reducing some of the items that aren’t getting ordered as much. They can consider changing food vendors and getting lower quality food
