CHEMISTRY 120 CHAPTER 16 – REVIEW Amino acids, proteins and enzymes Amino acids: The building blocks of proteins (only 20 different ones!). o Structure: contain a 1) carboxylic acid group and 2) an amino group on the alpha ( α ) carbon and 3) a hydrogen atom. each amino acid contains 4) a different side group (R). R groups determine polarity and/or acid/basic properties. Chiral: structural isomers that have atoms bonded in the same order but in different 3-D arrangements in space all amino acids are chiral except when R = Hydrogen. o L-amino acids are the only ones used in proteins. Zwitterion: amino acids in the body have a + and – charge. has charged −NH 3 + and -CO 2 groups. Isoelectric point (pI): amino acid has equal + and – charges at the isoelectric point (pI). Peptide bond: how amino acids are connected in a protein. o An amide: forms between the carboxyl group of one amino acid and the amino group of the next amino acid. Proteins: natural, unbranched polymers of at least 50 amino acids.
