Biological Chemistry 9/28/2007 Biological Molecules Carbohydrates Lipids—fats Proteins Nucleotides and nucleic acids Carbohydrates All carbs contain sugars Glucose, mannose, ribose, galactose, and fructose Glucose plus galactose form a disaccharide called lactose (in dairy) ****BE ABLE TO IDENTIFY THE GLUCOSE MOLECULE STRUCTURE! ***** Maltose is made up of 2 glucoses in a disaccharide form. Potato -> Starch -> glucose Starch is plant based (glucose storage) What is starch made of? GLUCOSE! Glycogen is the storage of glucose in animals. Stored in your liver and muscles. Cellulose is long strings of glucose and is found in plants. Lipids Fats and Oils Phospholipids Steroids Glycerol + 3 fatty acids (condensation synthesis, hydrolysis) fat + 3 waters Emulsifier (polar end with attach to water, the nonpolar end is hydrophobic) + fat = emulsification Types of Fatty Acids Plamitic Acid (saturated- no double bonds) Oleic Acid (monounsaturated- one double bond)
