Overall Course Learning Objectives - Following the completion of this course, students will be able to: 1. identify reliable sources of nutrition information. 2. explain the basic tenets of a good nutrition as well as the various tools available to consumers to help achieve a healthful diet (e.g. Dietary Guidelines , MyPlate , food label). 3. make informed food choices. 4. describe each of the energy-yielding nutrients (carbohydrate, lipids, protein), including their food sources, digestion, metabolism, function, and requirements. 5. describe each of the micronutrients (fat and water-soluble vitamins; and macro and trace minerals), including their food sources, bioavailability, digestion, metabolism, function, and requirements. 6. recognize the role of nutrition in the development and management of common chronic human diseases, such as heart disease and diabetes. 7. identify the importance of water to human health, including sources, functions and balance. 8. describe dietary supplements and functional foods- appropriate uses, labeling, regulation. 9. explain the basic concepts of energy balance, weight control and treatment of overweight/obesity. 10. describe the role of nutrition in physical fitness. 11. explain various aspects of the US food supply, including food availability/security, production, preservation/processing and safety. 12. identify the changing nutritional needs throughout the human life span (pregnancy, breastfeeding, infancy, childhood, adulthood, aging). Grades- How to earn your grade: POINTS I. Syllabus & Academic Integrity quizzes on Canvas-2 @ 25 pts ea 50 II. LearningCurve Homework-18 assign. @ 25 pts. each 450 III. LaunchPad Real World Nutrition Activities (4 @ 15 pts. ea) 60 IV. Miscellaneous Assignments/Activities 40 V. Four in-class EXAMS @ 100 pts. each 400 1000 Total Grading Scale: Final grades are determined by the sum of the number of points accrued (not on percentages). Do not get lulled into a false sense of security with the Canvas-derived grade percentages as they only reflect work completed , not total work required . In the end, only the total number of points you earned out of 1000 matters in calculating your final grade. Remember, grades are earned , not deserved or entitled.

Attendance will be taken in the form of written work completed and all students (Sections 01, 02 or 03) can earn up to 5 extra credit points each day for attending the entire class time of 75 minutes. Note: There are no other opportunities for extra credit. This includes all reasons for not being able to attend the Thursday Activity. Therefore, please do not ask as the answer will always be “no”. This extra credit is a gift not a right.
