Table 3. Quality Specifications of Coconut Sap Color Beige to light brown pH ≤ 6.0 Brix 13-14.5 Table 3 discusses the quality specifications of coconut sap. Quality specifications of coconut sugar contain the following: color, pH, and Brix. Coconut sap should be beige to light brown, it also has a pH level of ≤6.0 determine if the coconut sap is acidic or alkaline, and coconut sap should have a Brix of 13 to 14.5, sugar content of an aqueous solution. Benefits of Coconut Sugar. Coconut sugar is a natural sweetener derives from tapping the unopened inflorescence of the coconut palm. It is a simple farm technology that involves a natural heat evaporation process to transform watery sap into a stable form of sugar granules. Based on the 2007 study by the Food and Nutrition Research Institute (FNRI), the coconut sugar glycemic index (GI) was 35. It is therefore classified as low GI food, which can be used as a natural diabetic sweetener. Low GI food causes a small
increase in glucose levels in the blood. High GI food triggers a dramatic escalation. The higher the GI, the higher the response to blood sugar [PCA18] . Coconut Sap Syrup. Coconut sap syrup is a natural sweetener that is obtained by boiling the pure and fresh coconut sap until it is adhered to in moderate to deficient heat. It has a lovely sweet and creamy flavor with a distinct fruity taste of coconut. Nutrient-rich coconut sap syrup has a low glycemic index (GI) of 39 [PCA18] . Table 4. Benefits of Coconut Sap Syrup. Coconut sap syrup is rich in amino acids, specifically glutamic acid, which plays a vital role in the normal function of prostate gland (male reproductive system); used by the body to build protein, and is a good source of carbohydrates, sugar, B vitamins, and minerals such as calcium, sodium, iron for healthy body. Coconut syrup is also rich in inositol which functions in nerve transmission, regulation of enzyme activity, transportation of fats in the body and the body and essential for hair growth and prevent some causes of thinning hair and baldness. It also contains a significant amount of energy calories and a low glycemic index of 39, which makes it good for people with diabetes when used in moderation [PCA18] .
