They ran so many tests, diet changes, and more tests for months, but the only true conclusion was that I had multiple food sensitivities called FODMAP. FODMAP stands for Fermentables, Oligosaccharides, Disaccharides, Monosaccharides, Polyols; it’s basically a fancy way of saying that I can’t consume the fun foods in life. Originally this type of intolerance was a rare occurrence, but the numbers have risen quite drastically in the last twenty to thirty years. More and more people are beginning to reject all the foods they are given. Our options are limited because there is no known cause for this issue increasing. The speculation made by many scientist and doctors is that the way food is processed now it the culprit.
Society is greedy and impatient; we want things cheap and now all the time day and night winter summer and every time in between. This is not a slight at today’s society it is just something that is part of it. Technology has a hand in it the way children were raised has a hand in it and probably multiple other factors have shaped this way of culture.
