Trade waste food services business
Food service businesses produce waste like cooking oil, grease, fats and food
solids. If this waste goes directly to the sewer system, it can cause blockages, sewer
overflows and damage to the environment.
To control this risk, food service businesses are usually required to install a
grease arrestor (grease trap) and hold a Trade Waste Approval.
Pollutants in commercial / industrial wastewater such as fats, oils and grease (also
known as FOG) cause major headaches for Water Authorities in their downstream
water purifying plants. As a part of good commercial kitchen liquid waste
management, businesses such as commercial kitchens, cafés and restaurants are
required to install some form of wastewater cleansing system at source.
An alternative is the Grease Guardian - an above-ground active grease and oil
interceptor that removes 97% of fats, oils and grease (FOGs) from wastewater at
source so that clean water passes downstream while the FOGs are collected in a
container for easy recycling.
Drain Protectors can be fitted in sinks, floors and floor troughs to filter solids from the
wastewater ensuring that they do not pass downstream and putrefy in grease traps
and sewer lines. Such devices are now a pre-requisite for Trade Waste licensing in
several Water Authority areas.

Grease Guardians are a sustainable alternative to a grease trap. They filter solid
food waste from entering the sewer network and can reduce existing grease trap
pump out requirements thus reducing truck movements. Recovered grease can be
easily recycled.

communities. The environmental benefits of water recycling include the:

-reduction in nutrient loads being released to our waterways
-improved quality of public assets like sporting field surfaces
-support of agriculture where environmental sources of water are insufficient.
The use of recycled water must be fit for purpose. This means suitable control
measures must be in place to reduce risks to an acceptable level. New recycled
water supply applications will be approved only in situations where its use will not
