Pesticides present rare risks of the doses present in our food. o Surveys show people worry a lot more about pesticide residues than microbial contaminations. o People underestimate common risks and overestimate rare risks. o When pesticides are improperly used then can be bad. - Aldicarb: o Pesticide used on cucumbers o The farmer who used aldicarb on cucumber did not dilute the aldicarb properly before use so there was a high conc. of it on the cucumber who ate it. --> it can cause cholinergic poisoning (ach was only 70% normal). (not fault of pesticide but fault of farmer that did not dilute it properly) o No safe or dangerous chemicals, just safe or dangerous ways to use it - Company Picnic: o 20 ppl, about 45 min later, 14 of them became very ill… o Problem was in cabbage salad. It was the pepper that was added to it. It was not pepper. What he thought was pepper was a pesticide…it was an aldicarb. o Gentleman had found something in a truck and thought it was pepper but it was a pesticide…

Gets in air, gets washed down, mercury gets in water, reacts with water then it gets in fish. o Can be problem in pregnant woman o Embryo is most susceptible to woman o That’s why pregnant woman do not eat large tuna, shark, sword fish (eat small fish) - THOSE ARE UNINTENTIAL TOXINS NOW… Naturally Occurring Toxins… - People assume poison is all synthetic…not at all.
