And also, in the same way as you've got potentially animal carcinogens in apples, you've also got some anti-carcinogens, such as the flavenoids. And the flavenoids, in this particular case, would counteract the formaldehyde. And in terms of carcinogen, it is not true that only synthetic substances are carcenogenic. Coffee: There are more natural carcinogens than synthetic ones in our food. But let's take the example of a cup of coffee. A cup of coffee contains approximately 10 milligrams of known carcinogens, such things as acrylomide, caffeic acid, benzene, styrene, formaldehyde, and furfural. So again, what is really important is that, it is not of real concern. And actually, in a paper by Ames and Gold, it is clearly stated. "There are more natural rodent carcinogens," notice rodent, meaning animal carcinogen in this case, "by weight in an average cup of coffee than there are potential carcinogenic synthetic pesticide residues in the average North American diet for a year."

And it's very interesting to note that coffee is the number one source of antioxidants in the diet. There are antioxidants present in coffee. And since we drink a lot of coffee, we take in a lot of antioxidants from the coffee. And being from France, I'm really happy to say that France has the highest life expectancy for these countries. And is it possible that it is the wine? Well, we'll look at this in more detail, when I present my section on wine. In jest, I could say that, a long life increases the chance of dying from cancer. And the point is that, when we died from infectious diseases, people did not live long enough to die from cancer. And cancer is an old-age disease. So the longer you live, the greater the chance of dying from cancer. Because now the diseases such as tuberculosis and pneumonia have been dealt with because of development of antibiotics. Then unfortunately, what is left is cancer. Well, despite what one may think, there is no such thing as a cancer epidemic. It just goes up because we are starting to live longer. Another thing to also understand is that natural doesn't mean safer. Some people are allergic to peanuts. A severe allergic reaction can come by. It's known as anaphylactic shock. Dating back to the 1970’s, there were conflicting studies linking synthetic food dyes to hyperactivity in children Doses: It is the dose that makes the poison. Sola dosis facit venenum. In this particular case, the scientists discovered if the water was left for a long period of time in the bottle, some antimony will leach out from the plastic into the water. Antimony is used as the catalyst for the making of this type of plastic PET, polyethylene terephthalate PET plastic. Now the amount of antimony, which is a toxic substance, that would leach out was extremely small. The study showed that it was of the order of 600 parts per trillion, very, very small amount.
