Cultural construction due to economic factors o Increasing work hours from factory jobs pushed the dinner to night time instead of the original lunch time (dinner was actually lunch pre- industrialization, supper was considered dinner) Not all meals are created equal Dinner o Changes in what and how early Americans cooked their food Overtime, americans assigned significance over different meals When Europeans came to US, they despised Native Americans b/c they believe Indians just ate whatever they want and however they want → Europeans didn’t have well established meal patterns but started to developed that there should 3 meals a day w/ one of them to be the main meal First meal: breakfast was paid more attention before with European Americans than it is today (today people skip breakfast) Dinner for colonial americans say that dinner is the most important meal o Changes in dinner time: noon time → evening time Luncheon o Less and less important of noon meals due to industrialization and urbanization o Became a light meal for people o Luncheon characterizes the light meal of the day Industrialization and urbanization o Agriculture workers thought dinner was so important because they worked hard and is looking to eat once they are done with their work around noon o Urbanization → increase separation from food preparation, time is no longer decided by our own schedule, but by the demand of the market, few people have time to take a long break around noon time o Wealthy around that time wanted to have more time to make lavious meals (around 1880s) o Two views: one family can have dinner around noon while others have dinner around evening Meal cycle o Food cycles and life cycles Week, weekend, season, holiday: repetition o Meal as a social code o Our days are punctuated by daily meals o Meals of each week, which culminated in a pattern of weekend food activities o Repetitive patterns are in turn marked by big food events, which we celebrate life-cycle and calendar events o Daily and life-cycle events reveal the structure of food system, which reveal food choices we make on long-term and short-term basis o Feasts or festive feasts - important occasions (birthday, reunions, school reunions) → reveals food choices we make in long term occasions
