Hershey became extremely rich and founded a city called Hershey in Pennsylvania where
everything has a chocolate theme
Chocolate received a major development during WWII

Chocolate was part of the ration of the GI due to high caloric content

concentration of fat and large amount of sugar

Problem
during the war, especially in Pacific, is that it would get hot and chocolate
would melt

US Army asked Hershey company to make a chocolate that would melt in the mouth but
not in the hand, and also asked that it not taste too good so that soldiers would not
spend time eating chocolate rather than fighting
“taste a little better than a boiled
potato”

Tropical Chocolate was developed by Hershey, but not very popular or widespread since
people did not like it
o
US Army turned to Mars company to produce better-tasting chocolate
o
Had idea to coat chocolate in hard shell made of candy to contain melted chocolate
o
However, when it was very hot the chocolate would expand and break coating
o
Mars company went to
Dr. Alfred Stern
(1942) who was a Jewish refugee living in
Montreal

Asked him for a way to keep chocolate in shell
o
Idea was to
blend air into chocolate
prior to coating so that instead of crushing coating
when expanding air bubbles would be crushed instead
M&M chocolate
M&Ms (1976)
had different colours, but for 11 years there were
no red ones

Was believed that the red dye used was carcinogenic
o
Red dye #2 is carcinogenic, but the dye that was used
was red dye #40
which is not
carcinogenic to test animals
o
Parents were still worried, so it was removed
o
In 1987 the red was reintroduced
Other stories associated with colours of M&Ms

Rolling Stones in their contract asked that only brown M&Ms be in their dressing room

Aerosmith demanded only green (believed to be an aphrodisiac) in their contract

Reason was to make sure promoter had read full contract

Godiva is a famous name of chocolate
Big name in chocolate are the main ones produced from Criollo, etc
Porcelana is a big name which comes from Venezuela, as well as Ocumare
Most expensive chocolate in the world is wrapped in gold
