I would absolutely recommend taking this class! Dr. Pohlschneider was a very straight forward professor who will answer any food science questions and also encourages creativity.
There is a group project as a final in which a group of 4-5 students collectively make a product and make a presentation on the sensory analysis of the product they made, challenges they ran into while making the product, and what they would do differently. The sensory analysis of each group's product is conducted by the entire class, so its a great experience getting to taste each different food product developed by other classmates.

Take notes and go to class as much as possible, the topics are easy to understand but they're harder when you have to learn them on your own.
