Not too easy. Not too difficult.
I wouldn't recommend this course because the professor tended towards overly opaque descriptions of the material he was attempting to teach. However, he did provide useful feedback on the essays we completed, though the grading process did take a long time compared to what other professors were able to do.
The highlights of this course were learning how to write as NYU expects its students to: thoroughly, clearly, and with insight gained from lots of background research and extracurricular reading. It was a fairly straightforward introduction to writing papers of a longer length, which many college freshman are not used to.

Advice for students:
I would advise students to carefully proofread their papers before submitting them, and taking the feedback they receive seriously, as the same mistakes tend to pop up from paper to paper.
