Menu planning, along with recipe writing, production sheet writing, and nutrient analysis is the big project for the class. You discuss a lot of food safety and learn about different food service operations.

The book is not necessary for this class, however, it is the same book for the next course in the food service sequence for nutrition majors. I heard you might use it in that class. Find a good group to work with on the project and start early so you can ask questions. Also, go to class and study using the powerpoints. tests are long but not hard
