Not too easy. Not too difficult.
This honestly would be the best class I've taken so far. Not because it was easy and I got an A in the class, but because it kept me intrigued. This class taught me a lot about myself, and helped me identify a few philosophies that I could use and already use in my life. If you're paying attention in class and active in discussion you'll learn a lot about yourself that maybe you didn't even know.
The main highlight in the class was learning how to meditate. I learned the importance that meditation can play in your life. The fact that stuck most to me was that if you meditate for 30 minutes, and I mean just let go of everything and get deep into it, is the same as sleeping for 4 hours. We never got to that level, but at the beginning of every class we would do breathing mediation, where we let go of everything and just counted our breathes. We started at 3 minutes and ended up going to 5 minutes. Once you got it down just a little you could feel a big difference in your body which was amazing.

Advice for students:
Take Kim Diaz. She is a great teacher and she practices what she preaches. She's not too tough, but she's isn't too easy neither. If you take her class, talk to her! She is there for you and she is a real easy-going lady.
