Not too easy. Not too difficult.
This course focused on taking the basic skills you had, and developing them more. We focused quite a bit of time on knife skills, since they are the focus to learning how to be successful in the kitchen. We also learned about foods nutritional value, and the affects it has on your body.
I would say the highlights of this course was our torte unit. Making them was fun, while challenging at the same time. And of course eating what you cook is always a plus.

Advice for students:
Definitely don't put off studying for the final, and don't get distracted by all the kitchen work you do either. The final sneaks up on you, and if you're not prepared, you wont do well.
