I learned a lot about nutrition by taking this class. It is a really easy course for helping out your GPA. It really helps you see what you eat and what it does to your body.
You have to keep track of your daily food intake for 2-3 weeks, but it is worth it. It will tell you all you need to know for a beginner who doesn't want to be a nutritionist.
