Not too easy. Not too difficult.
I recommend this course not only because it's a requirement, but it was by far one of the most enjoyable classes I've ever had. The teacher created an atmosphere in which every student had hands on experiences and communicated with either on a daily basis.
We were taught the correct way of living a healthy life style, our professor debunked a lot of the myths that weight lifters and other athletes deem necessary to be in the top %10.

Please practice what you preach, we learn how to live healthy, all you have to do is follow through what you plan on teaching someday. It's a huge pet peeve of mine when a nutritionist graduate is over weight and still tries to tell others how to be healthy.
