Professor Acker is a very knowledgeable and caring teacher. She has worked in the field for many years and does a great job of conveying the importance of a healthy and well balanced diet is.
The highlights of this course stressed the importance of understanding the nutrition labels on packaging, what are the important nutrients and micro-nutrients, and how our bodies respond to the many different "dieting" diets are. Professor Acker did a wonderful job of teaching us that every body is different and understanding what healthy options are for all of us. It is important to pay attention to what we are consuming and putting into our bodies and why a lot of the fad diets do not work.

Class attendants and group participation are key to earning a good grade in this course. Show up to every class and be actively involved with the group work and you will learn, earn a good grade, and it will be more fun.
