Not too easy. Not too difficult.
For anyone wishing to take more than one biology course, I would definitely recommend this class. Professor Herrell provides you with a concrete foundation in biology that will come in handy in the future. She teaches using powerpoints that you have access to so that you may later go back and revisit and even provides study notes to use as well. Her tests can be difficult and one thing I've learned is that you must study ALL the information she teaches because questions can be very specific. But the information is readily available and so are many other sources she provides such as practice quizzes and reading reviews so it's really up to you and how much effort you put in. She provides extra credit that also helps along the way. She is a very fair and kind professor so I recommend her if you want to learn anything.
The highlight of this course would be the interesting labs that we did. We did a three week lab experiment on Polyacrylamide Gel Electrophoresis which was really interesting especially when it made it sense. The labs are easy but they do require pre reading and you must be careful about answering postlab questions correctly.

Advice for students:
You have to put in time to succeed it's not an Easy A. An A is definitely possible but you just have to study. Learning each lesson as it comes is easier than trying to study all 5 chapters before the test day because the information builds so it'll be harder to understand the later chapters if you don't keep up.
