I would definitely recommend this online course. There is a 5 question assignment and a test due for each chapter and there is one chapter a week. There are also 5 discussion questions, each requiring an initial response of 275 words and 3 additional 50 work responses to other students. All assignments, tests and discussion boards are available from the first day of the class, allowing you to work ahead if wanted.
I learned all the basics to living a healthy lifestyle, and things I can actually easily apply to my life. The book really covers what foods have what affects on our bodies and how we can ensure we are getting the nutrients our bodies need and the right amount of each.

I would recommend reading through the weeks chapter first, then answering the 5 questions for the chapter assignment. Then before taking the test review the end of chapter review and tests and go through the chapter tapping the different sections to make is easy to find certain info while taking the online tests.
