Not too easy. Not too difficult.
I recommend this class because the professor seems to really care about his students, I learned a significant amount of Spanish in a short time, and the class size is usually very small. The only thing I didn't like about the class was that the professor only spoke Spanish and we were supposed to do the same, that is part of the reason that I learned so much, but it's also part of the reason why I missed a few things.
I learned conversational Spanish. I have been able to communicated a couple of times with people who only speak Spanish by only needing to know a few words. I learned about pronouns, grammar, future tense, gerunds, present indicative, and a lot of useful vocabulary. I've taken Spanish in high school, but didn't learned words that I can use in everyday speech.

Advice for students:
I suggest Spanish because it is useful in the US and now you know that prof Meizoso will teach you a lot and be there when you need help. Use flashcards for vocab and do all of the homework, even the homework he doesn't collect, it will make things easier for you when the test comes.
