Not too easy. Not too difficult.
It is a good class to take if you need an extra credit for graduation. The teacher will give you chances to explore different dietary options, and teach you about the human body and how it digests food, what exercise is good for you. etc. She gives out study guides which is very helpful. A fairly nice and easy course over all.
The highlights of this course is the different dietary options the students explored. I learned about what is good and bad for different people to consume.

Do the reviews yourself. Pay attention to deadlines because they sneak up on you. Establish good relationships with your classmates because there will be group projects.
