Not too easy. Not too difficult.
Class is okay. Just like any other Strayer class. The professor does grade quickly and doesn't nit pick the discussions. Do you work, follow instructions, participate and you should be fine. The overall course is not difficult, but will be a little more challenging 1/2 way through if you are not used to operations planning, set up and forecasting models. But even then, the course id manageable, you just need to take time to read the material at this point.
This course will help you learn to better plan and set up operations to meet demand and be efficient. It provides you with various methods to forecast and evaluate different areas of business operations.

Advice for students:
Follow the syllabus, read directions and do the work as assigned and you should be okay. There are a couple of written assignments. The first one isn't difficult...I haven't gotten to the 2nd one yet. But even if you don't do so well on the papers, you can still pass the class by doing well on the quizzes and properly participating in all of the discussions.
