Not too easy. Not too difficult.
Best thing about Ms. Mudock is that she asks people if they have questions about the test- right before the test! So if you didn't study, all you have to do is ask her questions (ex. How does aerobic respiration work? What are nephrons?) and she will happily answer, and there is a 90% chance, since she writes the tests, that she will mention an answer to a question on the test. But since she is such a good teacher anyway, you'll probably get a good grade even if you didn't study at home.
She uses all kinds of methods to teach her students: videos, pictures, lectures, etc. My favorite thing she does is that after she teaches something, she tells the people to draw it on their whiteboard. Yes, every student in her class has a whiteboard, because the surface of everyone's desk is a whiteboard! She really makes sure that you know the info verbally and visually before you exit the class.

Advice for students:
Just don't sleep in class and listen to her. Things she says during class are most likely word for word answers on the tests.
