Pretty easy, overall.
I would recommend this course for someone who is interested in the human body and how it reacts to different particles in the foods we eat everyday. I would not recommend this to someone who does not like the biology aspect of nutrition and does not want to learn about the process the body goes through in order to break down what we ingest.
The highlights of this course is the things your learn about the foods you eat everyday. Before, I never thought of the process in which our bodies break down foods for nutrients and minerals, now I am aware of some. I learned to make better choice of what I eat because of how it can effect my body and its functions.

Go to the lectures (she collects attendance), she gets off topic often but provides information that are on the exams. I do not believe one has to buy the book because she does not typically use it, unless she decides to use the online coursework that comes along with the book.
