Concerning output in STATA and using a multinomial model, how do you interpret the discrete changes and the odds ratios?

If you look at the attached assignment I have problems with interpreting Figures 2 and 4. Also if anyone knows how would choose between an ordinal or a multinomial model that would help as well (I need to explain why I make a certain choice).
